Why Summer Is The Season Your Pan Matters Most
Summer is the season your pan matters most because summer cooking runs hotter, faster, and more often than any other time of year.
Think about how the season actually moves. Windows open. Bodies outside. Meals that used to take an hour in January now take twelve minutes, because nobody wants to stand over a braise in August. So the heat goes up and the time goes down. Hard sear, fast blister, quick crisp, plate it, eat it on the porch.

Halve them, cut side down in a warm pan with ghee, let the sugars caramelize. Cinnamon at the end. That is dessert. No sweetener, no crust, nothing added. Summer already did the work and all you did was apply heat correctly.
